Rollito de Salmón con Crema de Queso: Un Entrante Navideño que Sorprende
La Navidad está a la vuelta de la esquina y con ella llega el momento de preparar menús especiales para compartir en familia. ¿Qué mejor manera de iniciar la cena de Nochebuena que con un entrante fresco, elegante y delicioso? Hoy te presentamos una receta de Martín Berasategui que reúne todos los ingredientes para brillar en tu mesa: Rollito de Salmón con Crema de Queso y Salsa de Cogollos.
Este plato no solo cautiva por su sabor, sino también por su presentación sofisticada y su sencillez de preparación. Es el equilibrio perfecto entre la tradición y un toque moderno, ideal para dar la bienvenida a tus seres queridos con una explosión de frescura y color.
Ingredientes para 4 personas
Para los rollitos de salmón:
- 12 lonchas de salmón ahumado
Para el relleno:
- 300 g de queso fresco
- 75 g de pepino en daditos pequeños
- 1 chalota picada
- Ralladura y zumo de 1 limón
- 3 cucharadas de aceite de oliva virgen extra
- 2 cucharaditas de eneldo picado
- Sal y pimienta al gusto
Para la salsa de cogollos:
- 400 g de cogollos de lechuga
- 1 cucharada de zumo de limón
- 50 ml de mahonesa
- Huevas de salmón o de trucha para decorar
Elaboración paso a paso
1. Preparar el relleno y los rollitos
- Extiende las lonchas de salmón ahumado ligeramente superpuestas sobre una tabla y coloca una hoja de papel film debajo para facilitar el enrollado.
- En un bol, mezcla el queso fresco, el pepino en daditos, la chalota picada, la ralladura y el zumo de limón, el aceite de oliva y el eneldo. Salpimienta al gusto.
- Reserva una parte del relleno para la salsa y coloca el resto en una manga pastelera.
- Forma un rulo con el relleno sobre las láminas de salmón y enrolla firmemente hasta obtener un cilindro compacto. Presiona con una espátula contra el papel film y refrigera durante 30 minutos para que coja consistencia.
2. Preparar la salsa de cogollos
- Retira las hojas exteriores de los cogollos si están dañadas y licúa los cogollos para obtener su jugo.
- Añade una cucharada de zumo de limón al licuado para evitar que se oxide.
- Mezcla el licuado con la mahonesa utilizando una batidora o unas varillas hasta conseguir una salsa suave y homogénea. Refrigera hasta el momento de servir.
Acabado y Presentación
- Retira el papel film del rulo de salmón y córtalo en cilindros de unos tres dedos de ancho con un cuchillo bien afilado.
- Coloca una base de salsa de cogollos en platos individuales o en una fuente de presentación.
- Dispón los rollitos de salmón sobre la salsa con cuidado.
- Decora cada rollito con una cucharadita de huevas de salmón o de trucha y unas briznas de eneldo fresco.
