Lubina Asada con Apio Nabo al Pimentón: Un Plato Refinado de Sabores Profundos

Ingredientes y Preparación:
Crema de Apio Nabo
Ingredientes:
- 25 ml de aceite de oliva virgen extra
- 1 diente de ajo laminado
- 300 g de apio nabo pelado y en dados gruesos
- 100 ml de caldo
- 500 ml de agua
- 200 ml de nata
- 50 g de mantequilla
- Sal al gusto
Elaboración:
- En una olla rápida, calienta el aceite de oliva y añade el ajo laminado. Cuando comience a dorarse, agrega el apio nabo, el caldo, el agua y la nata.
- Cierra la tapa y cocina durante 20 minutos a fuego medio una vez que suba la válvula.
- Escurre el contenido y tritura a máxima potencia, añadiendo la mantequilla poco a poco. Cuela la crema para obtener una textura suave y rectifica la sazón.
Apio Nabo Salteado
Ingredientes:
- 200 g de apio nabo pelado
Preparación:
- Corta el apio nabo en láminas de medio centímetro y luego en tiras finas y dados minúsculos, del tamaño de un grano de arroz.
- Saltea los dados en una sartén antiadherente con una gota de aceite durante unos segundos hasta que queden al dente. Escúrrelos y reserva.
Plato Principal
Ingredientes:
- 4 lomos de lubina de 120 g cada uno
- 200 g de apio nabo salteado (preparado previamente)
- 100 g de crema de apio nabo (preparada previamente)
- 20 g de mascarpone
- 20 g de parmesano rallado
- 20 g de mantequilla
- Cebollino picado
- Sal y pimienta
Elaboración:
- En un cazo, coloca el apio nabo salteado y añade la crema. Da un ligero hervor hasta que la mezcla reduzca y adquiera un aspecto de risotto.
- Fuera del fuego, agrega el mascarpone, el parmesano y la mantequilla, removiendo constantemente para que todo se integre. Ajusta la sazón y añade el cebollino picado.
Acabado y Presentación
Para resaltar el sabor de la lubina, salpimenta los lomos con 15 minutos de antelación. En una sartén, ásalos primero por el lado de la piel con una pizca de aceite de oliva, dejándola bien crujiente, y luego por el lado opuesto hasta lograr un punto nacarado en el centro.
Sirve la lubina con el risotto de apio nabo y acompáñala con una ensalada refrescante de brotes y tiras de apio nabo crudo, aliñada con aceite de oliva virgen extra, sal y vinagre de Jerez. Este toque de frescura equilibra la intensidad del plato y le da una dimensión vibrante y deliciosa.
