Lomos de Merluza con Mejillones y Almejas: Un Clásico Marinero con un Toque Sofisticado
Hoy te traemos una receta de Martín Berasategui que captura la esencia del mar en cada bocado: Lomos de Merluza con Mejillones y Almejas. Este plato es un homenaje a los sabores tradicionales de la costa, transformado por la técnica y el refinamiento de un chef con 12 estrellas Michelin.
Con esta receta, te invitamos a disfrutar de un clásico marinero lleno de frescura, donde la suavidad de la merluza se une a la intensidad de los mejillones y las almejas, todo envuelto en una sedosa salsa de champagne que eleva este plato a un nivel gourmet. Y lo mejor de todo: puedes tenerlo listo en solo 25 minutos.
Ingredientes para 4 personas
- 4 lomos de merluza de 200 g cada uno
- 24 mejillones frescos
- 20 almejas
- 1 diente de ajo
- 1 guindilla fresca
- 16 g de harina
- 200 g de champagne (o vino blanco espumoso)
- 100 g de agua
- 15 g de perejil fresco picado
- Aceite de oliva virgen extra
- Sal al gusto
Elaboración Paso a Paso
- Prepara la base aromática: Calienta una cucharada de aceite de oliva en una sartén amplia. Añade el ajo laminado y la guindilla cortada en finas rodajas, dejando que infundan su sabor al aceite, sin llegar a dorar demasiado.
- Crea la salsa: Incorpora la harina a la sartén y rehoga brevemente para que pierda su sabor crudo, cuidando de que no se dore. A continuación, añade el champagne y deja reducir durante unos minutos para que la salsa tome cuerpo y concentración de sabor. Luego, agrega el agua y reduce otros dos minutos para intensificar la salsa.
- Cocina los mejillones y las almejas: Añade los mejillones a la salsa y cocina hasta que se abran. Retíralos de la sartén y separa la carne de las conchas, reservándola. Después, introduce las almejas en la misma salsa y deja que se abran lentamente mientras la merluza comienza a cocinarse.
- Cocina la merluza: Coloca los lomos de merluza con la piel hacia arriba dentro de la sartén, dejando que se cocinen suavemente durante unos 3 minutos. Luego, dales la vuelta con cuidado, permitiendo que se terminen de cocinar junto con las almejas que se abrirán por completo en este tiempo.

Una vez que la merluza esté perfectamente cocida y las almejas completamente abiertas, añade los mejillones que habías reservado a la sartén. Rocía el plato con perejil fresco picado y un chorrito de aceite de oliva virgen extra en crudo para darle brillo y frescura.
